HOT CROSS BUNS

Ingredients

3cups refined flour (Maida), 30 grams butter, a pinch of salt, cup tuttifrutti, 
10 grams fresh yeast, 3 tablespoons sugar, 1 cups lukewarmmilk, 2 tablespoons 
sugar (glaze) 

Method

•  Sift the flour and salt into a large bowl. In a small bowl, dissolvethe 
yeast in lukewarm water. In a separate bowl, dissolve the sugar ina little 
water. Add both mixtures to the sifted flour and mix. Add thelukewarm milk, a 
little at a time, till all of it is incorporated intothe dough. Add the butter 
and knead till the dough is soft and smooth.Cover with a damp cloth and set 
aside till it doubles in size. 

•   Preheat the oven to 240 0 C/475 0 F/ Gas Mark 9. Grease a baking tray. 

•  Knock back the dough and add the tutti frutti. Shape into ten roundbuns, 
marking a cross on the top with the back of a knife. You can alsocut very thin 
strips of dough and place them in a cross shape on top ofthe buns. Place on the 
greased tray and set aside to rise for fifteenminutes. Bake for ten minutes 
till well-risen and golden brown. Removefrom the oven. 

•   To make the glaze, mix the sugar with onetablespoon of water and heat 
gently till the sugar dissolves. Brush thebuns with glaze immediately on taking 
them out of the oven. 

Makes 10 buns
