HOT CROSS BUNS Ingredients
3cups refined flour (Maida), 30 grams butter, a pinch of salt, cup tuttifrutti, 10 grams fresh yeast, 3 tablespoons sugar, 1 cups lukewarmmilk, 2 tablespoons sugar (glaze) Method • Sift the flour and salt into a large bowl. In a small bowl, dissolvethe yeast in lukewarm water. In a separate bowl, dissolve the sugar ina little water. Add both mixtures to the sifted flour and mix. Add thelukewarm milk, a little at a time, till all of it is incorporated intothe dough. Add the butter and knead till the dough is soft and smooth.Cover with a damp cloth and set aside till it doubles in size. • Preheat the oven to 240 0 C/475 0 F/ Gas Mark 9. Grease a baking tray. • Knock back the dough and add the tutti frutti. Shape into ten roundbuns, marking a cross on the top with the back of a knife. You can alsocut very thin strips of dough and place them in a cross shape on top ofthe buns. Place on the greased tray and set aside to rise for fifteenminutes. Bake for ten minutes till well-risen and golden brown. Removefrom the oven. • To make the glaze, mix the sugar with onetablespoon of water and heat gently till the sugar dissolves. Brush thebuns with glaze immediately on taking them out of the oven.
