How to handle fresh water fish 

• The river water fish are very bony; therefore remove the bones with tweezers.

• Use a sharp knife to get desired results.

• Do not marinate the fish for more than 15 minutes.

• Do not treat the fish with an acidic medium as it tends to cook its flesh.

• Cleaned and remove the entrails of the fish to keep it fresh for long periods.

• Store river and sea water fish separately, in temperatures between 1-2oC.

• Grilling, Frying and Baking are the preferable cooking techniques to derive 
the best flavours from river water fish.
