I used the tool, UPTOMP.exe I think, with no problem. Here is what I did:

Add second CPU
Run UPTOMP.exe
Reboot
Re-apply latest service pack
Reboot

It worked like a charm with no problems. Of course, do a full back up first!
I've heard horror stories where the system never comes back up after running
UPTOMP.exe.

Make sure you have loaded NT with multiprocessor option before hand, if not
you may have problems.
There was a tool to update processor without having to rebuild but I
wouldn't recommend it unless you absolutely know the driver for that
multiprocessor.
