You just need something that will do IM and log all traffic?

Checkout Openfire by Ignite Realtime.

http://www.igniterealtime.org/projects/openfire/

Works with just about any jabber client, plus they have their own. I believe 
their client does 1-to-1 video conferencing.

I've used it... very easy and the price is right.
