Tbh it's not really worth the hassle of Google Apps or some third party host, though I did think about it. We have various boxes in our DMZ so it's not much of a bother to run "some" POP3/SMTP server, it's just a question of which one.
If a paid Google Apps account for a couple of users would let me piggy back 40-50 domains at no additional cost for basic mail forwarding then it may be worth looking into, but my understanding is that unless you have multiple accounts it can't deal with domain1.com and domain2.com being registered under one account, but i...@domain1 going to one person and i...@domain2 going to another person.
