*drool* It's all good. I generally prefer the vinegar based sauces[1], myself. There are times though that I'm tempted by the Southern Carolina's mustard based[2], and sometimes[3] a sweeter less vinegary sauce is good.
[1] Brisket + vinegar sauce is da bomb. If you put a cloyingly sweet sauce on a brisket, I'm a gonna get you sucka! [2] A lot of times, I find they're too sweet. I didn't order honey mustard dressing here... [3] Usually when the cut wasn't smoked enough, unless it's a brisket which should always have vinegar based sauces on it.
