and a rigged/walking one when the model is made to move ?

Yes of course, I don't know what tutorial you're talking about but generally you do that with node masks or Switch nodes, and that will work on any type of node, whether or not the node contains animation.

Also, do you recommend any sources where to find 3d-models ?

Not really, search the web or get some contractor to make some for you...
