You could always (gasp!) make a PC for sound input and run PearPC on top of it. PearPC isn't that great and I couldn't get it to work, but it may or may not be a quick little loophole to the lack of Mac hardware. It won't be as fast as a real Mac, so you'll probably want to make the computer dedicated to just sound capture.
That definitely won't solve the problem. Moreover, what the heck is the point? If you're going to use the PC to capture because of a (perceived) lack of Mac-capable audio capture devices, you might as well do the capture and editing on the PC (in Windows) as well. I merely said that there's no "cheap" Mac compatible sound capture cards (not that there aren't any).
Anyway, the problem isn't with capturing audio. You can capture as many channels as you want and overlay them in software (except that you'd have to capture the channels independently of each other). The problem is output. I could definitely be wrong, but I believe core audio in OS X still only supports 4 channels in output. Sound Manager (System 7 - OS 9) definitely only supports 4 channels (at most). 5.1 just isn't possible in the "classic" OS (which I'm assuming is in use since this is the PCI list and not the G-list).
If you're looking for 5.1, either go with a PC or settle for whatever you can get out of SoundBlaster Live PCI for Mac.
I've got no problem with someone using a PC because it can do something better (or cheaper) than a Mac, but using an emulated Mac on a PC to do something that could be done natively on either just makes no sense.
