Could someone explain, or point me to an explanation, of how best to make a
Press spec PDF from an Illustrator 10 file on OSX.2.6?

I'm confused by options. You can make a PDF within Illustrator. Is that good
for use by newspapers? Every dialog box along the way seems to offer a PDF
option. Do I take any of them? Or just continue on with "printing" to PDF
(with Adobe PDF chosen as the printer)?

Saving back to Acrobat 4 seems to divide type paragraphs into chunks and
have troubles with transparency, etc. Hope it's reasonable to assume that
almost all printing companies can handle Acrobat 5.

You can print to a PS file and have Distiller make the PDF. Is that better?
The one I did recently rotated my landscape file to an on-its-side portrait
(and I couldn't figure out how to restore it; was able to change the View in
Distiller 6 but not the way the file was saved).

You can make an EPS, place that in QuarkXPress, save that as a Quark EPS and
distill that (that's the way the newspaper does it, on a page basis). The
one I tried appeared on screen to be over-saturated.

My criteria, I guess, are: good quality, editable, something the newspapers
and magazines will like.
