Whatever settings are in the filter are the settings you can manipulate.
So, for example, there isn't any way to get PDF/X-1a out of Quartz directly due to some design choices made by Apple...HOWEVER, you can get really close by using a Filter with color correction to a CMYK profile - and then using something like PDF/X Checkup from Apago to do the final "tweaks".
