Will there be any problem/issues in this scenario?

That depends on exactly how Adobe constructed the library and exactly how your multiple applications are using the library.
The Adobe PDF Library 5.0 is the code base that forms the core of Acrobat 5. You are, in essence, trying to do something similar to running two copies of Acrobat 5 on the same Windows machine at the same time.
I would be concerned with, and would investigate, a couple potential issues:
1. Is Adobe using DLL shared memory space; for example, for ASAtoms.
2. The majority of Windows system calls are thread safe; but, not all. I would especially look hard at temporary files created by the Adobe PDF Library 5.0; and, be primarily concerned with the wrong data being saved to the output PDF files.
You should also note; unless I'm getting confused on version numbers; Adobe does not recommend using the Adobe PDF Library 5.0 in a server environment.
Finally, the only way to really determine the suitability of any server software to perform a given task is to actually test the software, using real world data, beyond maximum load conditions, on a multi-processor machine.
