I try and remember to turn mine to auto when I'm done shooting for the current session just in case an op shows up unexpectedly. When shooting, I try and match the white balance to the current conditions. When shooting indoors without flash, I'll do a test shot or two with the default balances for the current lighting, and if the review isn't to my satisfaction, I'll set the white balance manually using a sheet of Epson Premium Glossy paper that I use for printing.
