Must be a different Joyce Chen from the one(s) in Boston. I met "Joyce Chen" at one of her restaurants in Boston, and the food was unbelievably good. There were quite a few "chinese" people in the restaurant as well. She is survived by her daughter Helen, who I think is still running the restaurants.

General Mills owned the Chinese restaurant chain Joyce Chen in Minneapolis-St.Paul,
Minnesota. It was a very successful chain in the twin cities with their
Swede/Norwegan heritage. They did focus groups up there and decided to take the chain
national.

Unfortunately for them, other major Metros in the US had a bigger chinese population
and more authentic chinese restaurants. The chain failed and they learned a lession
about doing their focus groups only in their own back yard.

We once stopped for the night in New Orleans on our way

Sounds like a similar principle.
