First, about how much space are you using, or do you think you'd need, to
continue posting pix and doing a little e-commerce?

I'm using just short of 6Mb, 5Mb of which is the photo gallery which I need to fill out a bit more. There are just under 60 pics there so far. I just checked my plan and I'm well short of my allowed 500Mb :)

I can set something up through my ISP, but was wondering about other
possibilities. Are there any places that may specifically lend themselves to this process? What sites/companies do you use, why did you choose them, and how are they working out for you? Is a .COM suffix a clearly better
choice than some other, like .NET or .ORG

.com is best because it's just so familiar and is instantly associated with business.

I'm with godaddy.com for my web hosting (was referred by a friend). Their cheapest account has plenty of space, some good web tools (including optional e-commerce stuff) and also database support. They also do domain registration but they charge an arm and a leg for .nz domains so I went with a local registrar for that.

How do you avoid the spam that often follows when a site is on line and has
a public presence?

I haven't had any yet, but mine doesn't have much of a public presence. Many hosts offer spam filtering but I disabled mine because it was getting false positives (ie blocking real mail). One way to avoid spam is to have no email links on your site, and create a small form which people can fill out to send you a message. The form calls a server-side script which passes the message on as email. That doesn't stop automated spam tools from putting junk into the form though :)

Choosing a name for the site is eluding me. My name is long and
cumbersome, and something shorter, easier to remember, and with a little more punch may be a better choice. Any suggestions on naming conventions -
not specifically a name - would be helpful.

It took me _ages_ to figure out a name, because I wanted something that was available not only as a domain name, but also as a company name. Also because I'm just generally hopeless at coming up with names. In the end I didn't register as a company, under the advice of my accountant. But if I choose to do so then the name is available.
