Good question. For pans of cars I set the autofocus to th´single  
center sensor. When I'm shooting people on the street, I generally  
choose the uppermost sensor with the camera in a vertical position. I  
never use the full array. That may have somthing to do with why I  
don't have a problem with  hunting.
