You can never have too many :) RAID is nice, but don't ever assume its all you need (as I note you have not, just commenting); I have seen a power supply go and simultaneously take out all drives in a RAID before. I usually try to keep an offsite version too; three copies in the same place don't help much if there's a fire. I had considered a fire safe, but I've heard people say that they're not necessarily going to save a DVD/HD.. they're okay for paper documents, but the plastics etc are a bit more delicate in the moderate heat that gets through.
