Its called manual focus prefocussing and it works in many cases. Its better than AF in cases where you can use it because you get less shutter lag and can shoot even higher frame rates than AF modes can because you take the required time to AF completely out of the loop. AF is great and necessary in certain cases, but in many cases its not necessary or even a help, its simply a hinderence.
