Glad to help.

There are many Lightroom tutorials and such available on the web,
although they're mostly pointed at Lightroom 2. LR3 is a beta and
there are many subtle and some not so subtle differences. I put
together a "Lightroom Learning Resources" document for my workshops,
it's available as a PDF download from:

Regards organizing your work as individual catalogs, well, that's
pretty simple. Simply create a new catalog for each job, named as
appropriate for the job, and import the files for that job into it. Do
whatever is required, then export the deliverables (web gallery,
printing files, etc) to wherever is appropriate.

The primary concept you need to understand is that Lightroom is based
on a database ... the .LRCAT file is an SQLlite database file. The
term "import" doesn't mean that the image files are read into the
database, it means that information about the image files is read into
the database. So you tell Lightroom to put your files whereever makes
sense for you to backup and archive them, and it reads their
information into the database file. It then builds a set of previews
which is what you are viewing when you're using the tools to edit,
adjust, etc your files. At the end of operations, you "export" the
finished images from Lightroom, which is when it creates new files
with all your metadata and adjustments applied. The original files
stay intact and untouched, all the work is stored in the database and
is expressed in the exported, finished products.
