1. I upgraded to Win 10 on my old machine and it ran fine. No issues and not too different from Win 7 in terms of the user interface. Upgraded my wife's laptop from Win 8.1 to 10 and would say that it was an improvement in terms of how the user interface worked. The only reservation I would have about 10 is that (AFAIK) you have no control over updates - they will be downloaded an be applied whether you like it or not. Over the years I've had a few situations where an update screwed something up and had to be undone, but that is a very few number of situations.

2. I have an IR converted K10D. It works works well be the metering is based on visible light, not IR. As a result - metering can be significantly off. So shooting involves taking a shot, checking the histogram, making adjustments and re shooting. I'm not familiar with the K20 but I think it supports live view. If it is metering directly off the sensor the metering will be much more accurate - it will be based on the IR spectrum that the modified sensor responds to vs viable light. I would consider that a plus in favor on converting the K20 compared the *ist D or K10D.
