I think I now have my email client set up for my three email accounts.
It should default to plain text whenever I try to send an email.

thing I do is going through a bunch of privacy configurations,
disabling all types of information sharing.
There are a bunch of sites that have lists of those and how to find them.
I usually use 1-3 of them, as they differ in the content and clarity.
