You can copy and paste from any of various PDF viewers in Linux. The
best ones are Kpdf and Adobe Reader 7.08 (yes there is a Linux version
of the latest Adobe Reader). I use them both, Kpdf for copying and
pasting (does better with graphics) and Adobe Reader for one-off
printing (faster rendering).

Having said that, if the creator of the PDF file set the permissions to
prohibit copying, then forget it. None of the Linux PDF viewers can
help. However, you *can* open the PDF in certain other apps, save as a
raster image, then OCR the raster image. That will get you at least the
text, although the results will be far from perfect and formatting will
be mostly lost.
