I use remember to create a stub of a note, with title and annotation, then flesh it out on the planner page, and run planner-update-note at the end. This approach has many benefits, including safety, font-locking according to the muse syntax, and the use of other modes like allout. You could probably make remember mode do all those things too, but it strikes me that the purpose and best use for remember is for quick, temporary things.
