Meh.  Of course you are literally correct.  But ordinary
users viewing the result on their Adobe Reader or built-in
smartphone app have no more means to change "Mrs. Smith" than
they do to reword a sentence in the middle of your boilerplate.
To me that is a practical difference from using forms.
