out of curiosity, what server doesn't allow "=" in addresses?

you can use virtual_alias_maps to rewrite the recipient. for example:

/^fax=(\...@example\.com)$/     fax.$1

note that this example breaks recipient validation, so you need to
protect this from spammers (for example, using check_recipient_access...)
