One approach is to set in main.cf "syslog_facility" to one that it is
generally unused. One or more of "local0" through "local7" are likely
to be idle. Then configure your log subsystem to ignore/drop all
messages for that facility.
/etc/systemd/journald.conf:
[Journal]
Storage=none
ForwardToSyslog=yes
Spin up a traditional logging service, for example syslog-ng, then in
syslog-ng.conf or equivalent ignore all messages for the selected
facility.
But Wietse's suggestion of using Postfix built-in logging to /dev/null
may suit your needs better, despite occasional "leakage" of mail logs to
journald. Rather depends whether, for persistance, you otherwise prefer
journald, or a traditional logger.
