spammer sends an email, then a real mail server accepts it, then decides it

that it is returned from a different server every time. Also, it was sent from
a random email of mine. Is there a defense against this kind of attack? Can I
somehow limit it so only my mail servers can send emails for my domains? Or is
there a way to block the bounces?

Do you have a wild-card pattern that accepts email for *every*
address in your domain?  Stop doing that.

This was the first problem. After changing this most bounces stopped.

sites that don't use wildcard patterns.

I also read through this and made additional changes to my config. It seems to be stopping all bounces now.
