Pretty much any postfix version from 2.3.0 thru the current snapshot will be reasonably safe and stable in a production environment.

Newer versions will have bug fixes and new features that may or may not affect you. Bugs in postfix tend to be small annoyances rather than major issues. New features are only useful if they fix some problem you have.

Check the online HISTORY and RELEASE_NOTES to see what's been changed.
