No.  Postfix is an MTA only.

Will the messages still be located on the Exch server after POP3 is
disabled?  My question is, after it is disabled, will you still need to
get the messages off the Exchange server?  Will new helpdesk messages
continue to put on the Exchange?  Or is mail routing being changed so
that these helpdesk emails are routed to your "new" server, whether it
be the helpdesk server or other?

What we need to know is where the messages will exist, after this
corporate change.  If they will still be on the Exch server then Postfix
won't do you any good.

If they will still reside on the Exch server you will need to pull them
with an IMAP client, assuming they're not disabling IMAP as well.  If
corporate is eliminating all protocols except the proprietary MS
protocols, you're in a pickle, and I'd recommend seeking new employment,
since your current employer would be lacking serious clue.
