You can still use dovecot-sasl even if you aren;t going to use it for IMAP access...

Although, if you are going to run an IMAP server, why *wouldn't* you use dovecot? The only reason I can think of is if you are already very fluent and comfortable with cyrus.

Personally, the only time I would recommend cyrus-sasl over dovecot-sasl is if you need your postfix to use client-side sasl (which dovecot doesn't currently support, unless that has changed recently and I missed it), or if you are already fluent with cyrus/cyrus-sasl and have no desire/plans to change with no desire/plans to change.
