Thanks, but can you or anyone else show an example or anything that
would actually help me obtain that functionality? I know the BCC is not a
supported ACTION in body_checks, but is there a non-trivial work around?

Postfix does not support the BCC action via header_checks/body_checks.
You need a content_filter or milter for that.
