You can/should use the "relay" transport for "inbound" mail, and
the "smtp" transport for outbound mail.  Appropriate overrides of
smtp_generic_maps can be specified in master.cf:

    master.cf:
        relay unix ... smtp
          -o smtp_generic_maps=$relay_generic_maps
          ...

    main.cf:
        relay_generic_maps = ...
