These GID bits do not matter. Therefore it is not documented.
In the exceptional case that Postfix requires group permissions,
those permissions are cpntrolled by the setgid_group parameter.
As a general rule, Postfix manpages describe the things that are
needed, and what Postfix does. There are bazillions of things that
Postfix does not need and does not do. It would not make sense to
document those.
Maybe you want to read up on some Internet FAQs on how to participate
in a commity as a new member. It is usually not the most productive
strategy to come in with guns blazing and telling people that they
are been doing things the wrong way.
Postfix is not perfect, so constructive comments are welcome.
