I also would like to chime in and strongly recommend building an RPM of Postfix
if you choose to go down this path. It'll make it a lot easier to manage. That
said, if it were my server I'd just run the CentOS-supplied RPM so that Red Hat
& CentOS can do all the heavy lifting for you. Once you start running your own
version, you've just created a job for yourself that you didn't have before.
I'd rather spend time on other things.
