Well, I think I solved THAT problem 20 years ago, with:
relayhost = $mydomain
which nowadays might look like
relayhost = $mydomain:587
or
relayhost = submission.$mydomain:587
Instead of asking sites to configure an SRV record for $mydomain,
you could ask them to configure an A record or MX record.
20-year old technology may not be as sexy as implementing the support
for an entire RFC, but it has fewer moving parts.
