Postfix only knows how to deliver to the top level of a Maildir directory (i.e. a properly named file in ~/Maildir/new/, if home_mailbox=Maildir/) and does not have any knowledge of how the IMAP mailboxes might be laid out, which can vary substantially.

An alternative to using the Dovecot LDA or LMTP is an old, reliable, unmaintained, and probably full of security holes tool: procmail.
