Most *desktop* mail clients can use either submission or SMTP on port 25
(you can configure that), as they are intended to be used on machines where
no MTA is installed at all, so no sendmail.

Thunderbird, as far as I remember (I haven't used it for a few years, I
use Evolution as my desktop client now) can be configured to use locally
installed sendmail, but this is a special case. Submission or SMTP is still
the default method of sending mail it uses.
