Clear "postconf -nf" and "postconf -Mf" details of just the Postfix
instance that you believe is doing unexpected rewriting. As well as the
content of any relevant "tables" (header_checks files, canonical_maps
files, ...). Plus logs showing the handling of the relevant messages.

There is no bug, because Postfix performs no such rewriting unless
you've configured it do so.

No, but, assuming that it is Postfix that's doing the rewriting, there
are configuration settings you've set that cause that to happen, that
could be unset or set differently.

Not in any way that makes sense to anyone other than you. The key
information was buried in an avalanche of prose. Decorate the
configuration and logs with concise context, leaving out all
speculation.
