This means that the underlying mailboxes (after rewriting) must be in
some other domain, i.e. Postfix will ultimately *deliver* mail to those
other domains.

That's OK, provided the underlying mailbox (in some other domain) is
correctly associated with the that user's credentials.

Yes, but the login->mailbox mapping will have to be performed by Dovecot.
