Thanks Norm; this was how I was trying to do it also.
I used guten-print and an updated esp gs, as built by my 'spec' files
(see mail thread ...

and also modified /usr/lib/lp/bin/foomatic-rip so it picked up the path
to the CUPS filters (from pkgs above) as the ppd file needs them.
With this setup part of my problem was that the esp gs was crashing (it
took me some time to notice that). I have raised the following bug on
esp gs ...

I haven't tracked down the root cause of the crash yet, so I am still
not further forward in getting it to print to the printer.
