I too use the D1x and tried about every software for it (Photoshop, Nikon,
Bibble, PhaseOne) and they all have different results.
It all comes down to, what are you happy with or what does your client want?
Test them all (they all have tryout versions, only PhaseOne for the D1x just
works under Windows for now) and see what looks best for you.

Personaly I prefer the Photoshop CS version for editing and viewing my
files. 
Only when I'm in the studio and work directly connected to the mac through
firewire, then I use Nikon Capture to be able to get the direct download
function. Or the time lapse function (which is great btw)
And of course one of the biggest advantages you get with Nikon Capture is
that you can use custom curves and store them back onto the D1x(!!)
