Below I have outlined a workflow that seems to be working well enough with
the work that has come my way so far. I invite and welcome constructive
criticism from anyone that cares to comment.
The one point that has eluded me and that still bugs me is point 14:
> 14 Delete non-pixel EXIF camera data as deemed appropriate for job.
I know this topic has been discussed on several occasions. I've read the
relevant sections in the archive and I'm none the wiser. I do NOT want to
delete ALL EXIF data, just some of the data that (for good reasons best
known to me), I do not wish to be known to all and sundry. As the creator
and copyright owner of an image, I should be entitled to make this decision.
Has anyone found a solution to do this without resorting to hacks?
Am I wrong in wanting to selectively delete EXIF data of my own images?
What is the industry rationale for this all-or-nothing approach for EXIF
data?

My digital photography workflow:
(Using batching wherever appropriate)
Capture:
1 Capture in raw.
2 Consolidate shooting session, rough edit and delete unwanted files.
3 Name and organise raw files into chosen file system.
4 Append/replace metadata using templates and XMP side-car files.
5 Archive the above with PS browser cache and XMP files included in
folders.
6 Catalog archived files.
Re-purposing of archived Raw files:
7 Convert from Raw (hopefully DNG soon) into 8 bit RGB working and output
spaces via ICC and soft proofing. Or via 16-bit for making high bit
depth adjustments before converting to 8-bit, if subject matter benefits
from this.
8 Use 8-bit files to make final and/or creative adjustments, manipulate,
colour manage, etc, using Photoshop alpha channel masks and
adjustment layers.
9 Create alpha channel masks for differential USM requirements.
10 Append metadata as required.
11 Save, archive and catalog as layered Photoshop RGB 'mother files',
preserving alpha channels and embedding ICC profiles and PS browser
cache and XMP files included in folders.
Job-specific processing for files delivered to client:
12 Crop/re-size as required for intended output.
13 Append metadata as required.
14 Delete non-pixel EXIF camera data as deemed appropriate for job.
15 Apply USM either globally or differentially using alpha channel masks
or other USM techniques as required for intended output.
16 Depending on destination, either:
A. Save as flattened RGB TIFF without alpha channels,
embedding ICC profiles.
B. Flatten, convert to CMYK, using destination profile,
embedding ICC profiles, save as TIFF.
C. Convert to sRGB, save for web, embedding ICC profile, if required.
17 Print proof, create web gallery, contact sheet, PDF, or similar for
client inspection, browsing and approval as required by job.
18 Archive and catalog as job file before delivery to client.
