I don't think you are wrong, what business is it of anyone your choice of
camera or exposure? I'm in favour of removing that data!

You don't say how you are cataloguing your work. I believe iView <http://
iview-multimedia.com/> will do what you want. Create a script which will
delete whatever EXIF data you wish to keep private. I think iView would
fit well into your workflow.
