When working with the 1Ds and the 10D I have a tendency to work in aRGB colour space and then convert to final destination space. I use Photoshop CS raw.
BTW. I have recently made profiles for both cameras ( sunny, cloudy, strobe etc) and I have had some surprisingly accurate - yes accurate - results given the limitations of camera profiling.
