Thanks for your post - as often a refreshing voice on this list. I too have long been fascinated by the brain's interpretation of visual data and it's subsequent reconstruction of the world around us, (OT as a subject, I suspect).
However, I think it has led me to an opposing view of digital/film to your own. I recall zooming into one of my first digital captures, after many years of working with scanned film: Seeing the side of an apartment building growing gradually into a block of pure, solid colour. Suddenly grain was film. Grain was a distraction. Grain was history.
To this day I've never missed the grain.
