While flower petals spritzed with water look stunning on film, they are
problematic on digital, to say the least; well, that's my experience with
them. 

Does anyone have any tips for avoiding the 'spots of white paint' look that
seems unavoidable, either in camera or in processing?

It's fine up close, but if a flower head is viewed from a few feet the
droplets really look like white paint!
