I doubt that it's Windows 7 that's the issue, unless it's a driver problem. Are these new Windows 7 boxes that have a different video adapter in them from the Vista box? You'll need a card capable of displaying the required resolution, you can't make it do something it's not designed for or doesn't have a driver capable of that resolution.
