How big are the monitors?  I have 1680x1050 available in Win 7, but I've 
got a 26" wide-screen monitor (and run at 1920x1200)!  Note that these 
are wide-screen resolutions.  Is it possible that Win 7 makes some 
different checks on the hardware configuration than Vista did?
Anyway, pretty cheap and easy to try a different monitor.
