The gauge and the engine ecu have separate sensors so changing the gauge 
one won't effect the ecu and idle etc.
There are quite a few different colours of temp gauge sensors on the Mk2 
Fiesta, not so sure about on the Mk3 but on the Mk2 they never seemed to 
make much difference.

Are you sure the thermostat isn't sticking open a bit, that would make 
it run cold except in traffic.
If it's a Zetec pattern stats only seem to last a few years.
