First, what kind of input specifically are you looking for?  As others have 
mentioned, the only real audio processing available in Quartz Composer is the 
Audio Input patch, which offers a peak volume and limited EQ.  If you're 
looking for sample data, or multichannel input, you're likely to be 
disappointed.

On the Audio Input patch, press cmd-2 to get its settings panel -- you should 
be able to select various audio input devices there.  Another useful tool may 
be Audio MIDI Setup -- it can help you identify what your optical input is 
presenting itself as (it may well be the Default Input device).
