I'm kind of curious... how are you actually connecting an ADAT lightpipe out
to an Apple computer? I've not known any Apple computers to actually have
lightpipe inputs.

You may be connecting to what is a stereo digital input that has a similar
connector, or are you converting to Firewire or USB? However, I generally
avoided ADATs when they were popular, so take that with a grain of salt.

You might try going to http://kineme.net , then downloading and installing
the "AudioTools" plugin. That has a patch that will also show all connected
devices, and another patch that will output all channel data, and show you
if you're actually getting 8 channels in or not.

Again, as far as I know, there should be a firewire or usb device that
accepts lightpipe somewhere in the mix here.
